Stuffed Bell Peppers: A Delicious & Easy Recipe


I wanted to make up for being absent for a moment and just share one of MY personal favorite recipes. My boyfriend also happens to like this recipe very much as well =) He's been sick the past few days so I decided make the stuffed bell peppers for him. It's a very easy recipe and you can tailor it to suit your taste. I hope you enjoy the recipe! If you want to make a vegetarian version, just do so without the meat, it's still very very delicious.







Cook Time: 1 hour and 15 minutes

Ingredients:
  • 4-6 bell peppers
  • 1/2 lb ground turkey
  • Chopped onions
  • Seasoning - parsley, basil, salt, pepper
  • 4 spoons tomato sauce 
  • 2 cups of brown rice
  • Cooking oil -  I use sesame oil because of the nuttiness and the flavor comes out well after being cooked in a meal.
  • Finishing sauce - can be substituted with cheese, the cheese should be baked with the bell peppers in the oven


Instructions:
  • Cook brown rice
    • Use 3 cups of water for 2 cups of brown rice
    • Bring water to a boil then simmer for 20 minutes
  • Preheat the oven to 375 degrees
  • Cut the tops of bell peppers and empty the inside (get rid of the seeds!)
  • In a large pot, boil bell peppers for 3-5 minutes
  • Saute the ground turkey with seasoning until thoroughly cooked
  • Mix the cooked brown rice with the sautéed ground turkey and tomato sauce
  • Place mixture inside bell peppers
  • Bake for 30 minutes
  • Top with finishing sauce
I do want to note that this does not hold well in the fridge, so make whatever you are going to eat at that moment. 

I recommend drinking this with an oaky red wine! It will bring out the earthy flavors and some of the nutty flavors of the sesame oil. Cheers! Here's to eating well and eating hearty.
